Ingredients

  • Red bell peppers

  • Olive oil

  • Salt

Preparation

  1. Preheat an oven or grill to 450 F.

  2. Place the peppers on a baking sheet and place in the oven or grill.

  3. Cook for 10 minutes or until a char begins to develop, then turn.

  4. Continue cooking until a char is developed on all sides of the peppers. This generally takes about 10 minutes.

  5. Remove peppers and place in a bowl, covered.

  6. Allow the peppers to steam for about 10 minutes to make the skin easier to remove.

  7. Peel the skin, remove stem and seeds, and cut into slices.

  8. Top with finishing olive oil and salt.
